ReplyDeleteCaffe Del Doge in Palo Alt, CA already offers espresso where the price is based on the beans used. Their regular espresso blend is $1.50 for a single $2.25. Then they offer a number of single origins ranging in price where the most expensive is $3.50 for a single and $5.25 for a double.
ReplyDeleteSo I think the public is ready to pay more for espresso based on the beans being used. I know I am. :) Bring on the COE espressos.

ReplyDeleteAs the colonel and probably dismas too can attest to (I was semi preaching this like 2, 3 years ago), I went through a period where NO FINGERS touched the coffee. I only dosed enough to make a nice mountain in the middle of the pf, and then tamped. At times, instead of swiping off the grinds from the rim and bayonnets, I would just blow the grounds off.
It's NOT a good idea. It does not produce consistent results. I tried to train myself for a year or more to nail it down.

2) Dosing and leveling need to work together. You can dose well, and ruin the puck distribution with poor leveling, and vice-versa. Isolating the two can help diagnose problems, and improve overall control.
3) During my bar-shift yesterday, I got very consistent with this technique... so I can't comment on your "year or more." :-P

ReplyDeleteConsidering the public, there's still a group that thinks a $4 latte is too expensive. On the other hand, there's an awfully large group of people that are willing to pay that price and I presume it's growing more towards acceptance, rather than the backwards. So bring on the CoEs.
