A thought on Chris Tacy's comparison of good coffee to the microbreweries and of "surly bartenders" to the barista...
ReplyDeleteMicrobrewers have control of their product until it is in its final form: the bottle. A roaster doesn't have that luxury. They depend on the barista to pull the shot and make the drink great. A bad bartender won't ruin a great beer, but a bad barista might well ruin a great coffee.
Although the industries share some core requirements (passion, craftsmanship, quality, etc.) it might be a mistake to try and model coffee after the microbreweries. The distribution and delivery mechanisms are not the same.
Just my opinion...
